A true boutique house with a contemporary spirit, it is located in the heart of the best Champagne wines on the heights of the village of Ay. Come admire the panoramic view of the Champagne vineyards from the rooftop! From the reception facilities to the centuries-old cellars dug in the chalk, passing through the state-of-the-art winery, you can familiarize yourself with the history and the secrets of the elaboration of the wines of the House thanks to the explanations of a guide. Champagne Ayala offers several wine tourism activities:

• Discovery visit, dive into the heart of the cellars for an initiatory journey to understand the philosophy of Ayala champagne followed by a tasting of the cuvées of the house Brut Majeur, Rosé Majeur, Brut Nature & Le Blanc de Blancs vintage.
• Prestige visit, discovery of the cellars and the particularities of champagne production, followed by a passage on the panoramic roof of the house to contemplate an exceptional view in the heart of the Grands Crus. Brut Majeur, Rosé Majeur, Brut Nature, Le Blanc de Blancs vintage and the prestige cuvée Perle d'Ayala vintage.
• Vintage experience, a special tour of the house followed by a unique tasting of exclusive champagnes from the wine cellar.

Champagne Ayala wines

The grapes from the best crus of Champagne are rigorously selected to respect the standards of the House, the wines are vinified in small thermo-regulated stainless steel vats (25,50,100 hectolitres) to separate the juices by grape variety, by cru, by plot... this in order to leave the possibility to the Cellar Master to be very precise on his fine selection of the best wines for the assembly of Champagnes, after fermentation.
