In the winemaking process at Herdade do Rocim, all processes used to transform grapes into wine aim to respect our terroir to the utmost. In our wines, whether single varietal or field blends, we only use wild yeasts. With minimal intervention and always respecting the principles of sustainability, the winemaking process is known as minimal intervention and essentially aims to reflect our terroir in each bottle produced.
