It is not about applying a technique to better master life and produce better wines; on the contrary, it is about letting yourself be inspired and having confidence in the dynamics of life, in order to... learn to live!

This calls for a collaboration between the attention of the human being and what nature provides. It is a return to the observation and understanding of nature's enchanting diversity, it is not a simple “laisser-faire” approach – living wine is not wild wine. We are in civilized wine, wine of emotion. So that's enough fuss and excessive politeness.
Make room for authenticity.

The biodynamic method, introduced gradually since 1999, is now practiced throughout the vineyard.

The maintenance of the soil is carried out by mechanical means, without any chemical weedkiller, in order to preserve the microbial life of it. We compost our own marc, mixed with manure, for a year, before returning it to our vines. We are accentuating our efforts on pruning and disbudding methods, for better health and therefore better aging of our vines.

We have eliminated the use of insecticides and thus allowed the return of natural predators. The treatment products used for the protection of the vineyard are only Bordeaux mixture, sulphur, biodynamic preparations and herbal infusions such as nettle, ready or yarrow.

The harvest is manual, in small openwork crates until they are sent to the press.

Sorting, with rigorous separation of the different qualities, is carried out on the stump. The pressing is carried out slowly with a pneumatic press. We carry out a static settling, then the fermentation takes place naturally with the yeasts which are on our grapes. At the end of aging, we add, depending on the life of each wine and not systematically, a reasonable dose of sulfur during bottling. This cultivation method, which respects the soil, the plant and the human being, allows the character of each of our wines and terroirs to express themselves better. There are, of course, no determining gestures that do everything, it is a complex set of different choices and well-felt actions.

About the people

Son of a Savoyard seasonal worker, Jules Paccot bought his first parcels of vines in Féchy. His son Roger succeeded him, created the cellar "La Colombe" in 1961 and established the reputation of the estate. Winemaker by choice, oenologist by passion, Raymond, Roger's eldest son, returned to his roots, to Féchy. This country, the Paccots loved it, chose it. Attachment to the land, work and passion, to enhance it. Today, the 4th generation, Laura, takes over by collaborating with the precious La Colombe team.
