BioSing was founded by David Lesar in the Ribnica Valley of Slovenia, a region shaped by centuries of craftsmanship. Instead of continuing the local tradition of carving wood, David chose a different material, meat. What began as a personal obsession with time, fermentation and purity of flavor slowly evolved into one of the most distinctive artisanal charcuterie projects in the region.
Today, BioSing produces dry cured salamis and sausages without additives, using only carefully selected meat, natural fermentation and long aging. The experience goes far beyond charcuterie itself. Hidden inside the cellar is also an exceptional wine collection of around 15,000 bottles from Slovenia, Bordeaux, Burgundy, Champagne, Italy and other iconic wine regions, carefully curated to create unforgettable pairings.
